🥢 Pork Fermentation Recipe for Topping (Pork 300 grams)
Fermented raw materials
• Pork Ridge or Inner Ridge, Sliced, 300 Grams
• 1 tablespoon soy sauce
• 1 tablespoon oyster sauce
• ½ teaspoon granulated sugar
• ¼ teaspoon ground pepper
• 1 teaspoon vegetable oil or sesame oil
• Oil flour (or cornstarch) 1 tablespoon
• ¼ egg white (or use a teaspoon tip baking soda instead)
• 1-2 tablespoons of water (to keep the pork moist and not dry)
Method of fermentation
1. Put the pork in a bowl. Put all the seasoning except the oil flour. Mix it together.
2. Add the oil flour to it, mingle until the pig is coated silently (the oil flour will hold the water, making the pork soft and not hard).
3. Marinate for at least 30 minutes. If best, refrigerate for 2-3 hours (or overnight).
💡 Softening Tips
• Use egg whites to get the softest pork.
• If you want to rush, use a little baking soda (teaspoon tip) to relieve protein, soft texture, but do not wear a lot, otherwise it will smell soapy.
