This week meal prep

Soooo…… didn’t portion out meals this week. Sometimes it easier to just give my family options and they can pick what they want.

On the menu is….

Roasted vegetables (potatoes, broccoli, and Brussels sprouts)

Spaghetti in meat sauce (ground turkey)

Sweet and spicy bbq meatballs

Egg salad

Pickled cucumber (I prefer fresh cucumber to pickles not sorry)

Grilled chicken

Homemade Tzatziki sauce

Mini chocolate chip muffins

And cornbread muffins

The variety ensures everyone finds something they like, and it keeps meals exciting. I also love incorporating fresh, crunchy elements like pickled cucumbers—or in my case, fresh cucumbers—which add brightness and balance to the plate. Homemade tzatziki sauce is another staple that adds flavor and freshness. For those looking for a sweet finish, mini chocolate chip and cornbread muffins are simple to bake and store well. This style of meal prep is especially ideal for families with different tastes or kids who sometimes want options. Instead of measuring and packaging every meal, prepping the components ahead saves time during busy weekdays and reduces mealtime stress. It also encourages mindful eating as each person can mix and match their favorites. By sharing this flexible meal prep method, I hope to inspire others to find meal planning that fits their family’s rhythm, making healthy eating easier and more enjoyable.
