☑ 5 okra
☑ 1 / 3 green onion
☑ ︎ 2 myoga

◉ Soy sauce tablespoon 1
◉ Sake tablespoon 1
◉ 1 teaspoon sugar
◉ Salt 1 / 4 tsp

☑ minced pork 100g

☑ ︎ Tianmian sauce 2 tsp

Cut the eggplant into pieces and soak it in water.Cut the okra diagonally after cutting the forehead.
Chop the green onions and myoga. Add the seasonings mentioned above.
After heating the oil in a frying pan, add the eggplant over high heat and brown the whole. Take it out once.
Add minced meat, garlic, Tianmian sauce, and Doubanjiang and set to medium heat to bring out the aroma. When the meat is browned, add the seasoning. Add okra and fry for about 2 minutes.
Return the eggplant and add water-soluble potato starch. Add green onions and fry quickly over high heat to complete. Finally, sprinkle plenty of myoga from above.

今回の「オクラとみょうがの麻婆茄子」、作ってみて感じた“さらに失敗しにくくするコツ”をメモしておきます。麻婆茄子って水っぽくなったり、逆にとろみが強すぎたりしがちなので、ここを押さえると安定しました。 まずナス。乱切り→水にさらす工程は、えぐみ抜きもありますが「油の吸いすぎ予防」にも効きます。時間がない日はサッと1〜2分でもOK。焼くときは強火で表面に焼き色をつけて一度取り出すのがポイントで、ここでナスの食感がベチャっとしにくくなりました。フライパンの油が多すぎたら、OCRにもある通り一度拭き取ってから次の工程に行くと、仕上がりが重たくなりません。 次にオクラ。下茹でしない場合は、板ずり(塩少々でゴロゴロ)をして産毛を取ると口当たりがかなり良くなります。炒め時間は目安2分ですが、太いオクラなら+30秒くらい。シャキ感を残したいので、入れたら炒めすぎないのが好みでした。 みょうがは“最後にたっぷり”が正解。火を入れると香りが飛ぶので、仕上げにのせると一気に夏っぽくなります。ちなみに「夏みょうがと秋みょうがの違い」が気になる人もいると思いますが、ざっくり言うと旬と香りの立ち方が少し違って、夏はみずみずしくさっぱり、秋は香りがしっかりめに感じました。どちらでも合うので、手に入った方でOKです。 甘み担当の甜麺醤は、コクを足す役。もし家にないときは、味噌+砂糖で近づけられます(例:味噌小さじ2+砂糖小さじ1〜)。「甜麺醤にマヨネーズって合う?」と聞かれたら、個人的には“味変”として少量ならアリでした。子ども向けに辛さを抑えた麻婆にして、取り分けた分にマヨをちょい足しすると、まろやかで食べやすいです。 最後にとろみ。水溶き片栗粉は一気に入れず、混ぜながら少しずつ。沸いているところに入れるとダマになりにくいです。ご飯にのせても麺にかけてもおいしいので、翌日は丼にして食べ切りました。
