• 1 ½ cups sugar

• 1 tsp baking soda

• 1 tsp baking powder

• 1 tsp salt

• 2 tsp cinnamon

• ½ tsp nutmeg (optional)

• 1 cup vegetable oil

• 3 eggs

• 2 tsp vanilla extract

• 2 cups finely shredded carrots

• ½–1 cup chopped walnuts or pecans

🧁 Cream Cheese Frosting:

• 8 oz cream cheese (softened)

• ½ cup (1 stick) butter (softened)

• 3–4 cups powdered sugar

• 1 tsp vanilla extract

• pinch of salt

Cupcakes:

1. Preheat oven to 350°F

2. Mix all dry ingredients together

3. Add oil, eggs, and vanilla—mix until smooth

4. Fold in carrots and nuts

5. Fill liners ¾ full

6. Bake 18–22 minutes

7. Cool completely

Frosting:

1. Beat butter and cream cheese until smooth

2. Add vanilla and salt

3. Slowly mix in powdered sugar until fluffy
