Yields: 6 cookies
Ingredients:
100g softened unsalted butter
20g oil
180g brown sugar
100g granulated sugar
10ml vanilla
2 eggs
300g flour
15g corn starch
6g baking powder
1/2 tsp salt
150g chocolate chips
1. Line a baking dish with parchment paper
2. in a bowl, cream the butter, oil, sugars and vanilla
3. In a separate bowl, whisk and sift the flour, corn starch, salt and baking powder
4. Add the dry ingredients into the wet. Fold until a dough forms
5. Divide into 6 balls. Stuff with chocolate then dimple the dough
6. Bake at 350F for 18 mins
7. Allow to cool for 30 mins before serving
