If you’re a fan of Biscoff and love the nostalgic taste of s'mores, this Biscoff cookie bars recipe is a fantastic twist combining both flavors. Baking these bars brings a wonderful blend of textures: the cookie dough is soft and buttery with a lovely crunch from the Biscoff cookies at the base, while the gooey marshmallows on top add a delightful melty sweetness reminiscent of campfire s’mores. From my experience, one key tip to perfecting these bars is to make sure the marshmallows are cut in half and evenly distributed so they toast nicely in the oven without overflowing or burning. Using both light brown sugar and granulated sugar in the dough creates a balanced sweetness and helps achieve a chewy consistency which is essential for cookie bars. When assembling, press the Biscoff cookies firmly into the base to create a stable foundation that contrasts nicely with the soft cookie dough and creamy Biscoff spread layer. Also, don’t skimp on the Biscoff spread—it enhances the signature caramelized flavor that makes these bars stand out. I usually bake them at 350°F (175°C) for about 25 minutes as recommended, but keep an eye on them during the last 5 minutes so the marshmallows turn a golden brown without burning. Once cooled, slicing the bars reveals a beautiful layered look with visible chunks of chocolate and crushed Biscoff pieces that add delightful bits of crunch. These bars are perfect for sharing at gatherings or as a special treat anytime you crave something sweet and comforting. For extra flair, you might experiment by adding a sprinkle of sea salt on top before baking to balance the sweetness or swapping chocolate chips for white chocolate for a different flavor profile. Overall, this recipe is a fun and simple way to elevate classic cookie bars with the unique flavors of Biscoff and s’mores, creating a crowd-pleasing dessert that’s sure to impress!
