レンジ麻辣湯を何度か作ってみて「ここを押さえると失敗しにくい！」と思ったポイントをまとめます。 まず豆乳（牛乳でも可）は“後入れ”が安心です。先に入れて加熱すると吹きこぼれやすいし、分離して口当たりがザラつくことも。私はレンチン後に豆乳を入れて混ぜ、熱々にしたい日は追加で1〜2分だけ温めています（様子見しながら）。 具材は、火の通りにくい順に“下に置く”とムラが減りました。おすすめは【下：春雨→真ん中：豚バラ→上：もやし・小松菜・えのき】。春雨がスープを吸ってくれるので、全体がまとまりやすいです。白菜を入れるなら、芯は薄切りにして下寄り、葉は上にのせるとちょうどいい食感に。 辛さ調整は豆板醤がカギ。辛いのが苦手な家族がいる日は、豆板醤を少なめにして、食べる直前に辣油を各自で足すスタイルが便利でした。逆に「もっと麻辣感」を出したいときは、五香粉をほんの少し増やすか、花椒（あれば）を追加すると一気にそれっぽくなります。 「麻辣醬（麻辣ソース）っぽいコク」を足したい日は、香味ペースト＋にんにく＋生姜に、しょうゆを数滴たらすのもおすすめ。スープの輪郭がはっきりして、お店感が出やすいです。 業務スーパーで揃えるなら、春雨・きくらげ・冷凍小松菜（または青菜）・もやしあたりが使いやすかったです。きくらげは戻して冷蔵しておくと、次回は“入れるだけ”で時短に なります。 最後に洗い物を減らすコツ。耐熱ボウルで作ってそのまま食べると本当にラクでした。ラップはふんわり、加熱後はよく混ぜて味をなじませると、スープが一段おいしく感じます。
