Stir fry vegetables and grilled chicken
Hey everyone! I recently discovered my new favorite go-to for a healthy and satisfying dinner: this incredible grilled chicken and veggie stir-fry. If you’re anything like me, you’re always on the hunt for meals that are both delicious and good for you, especially when trying to maintain a #healthylifestyle2024. This recipe checks all the boxes, and I just had to share my experience with you all! What I love most about this dish is how customizable it is. You can literally use any vegetables you have on hand, which makes it perfect for using up whatever is in your fridge. For my latest batch, I used colorful bell peppers, crisp broccoli florets, thin-sliced carrots, and some tender snap peas. The combination of textures and flavors is just divine! The grilled chicken adds that smoky, juicy element that pairs perfectly with the fresh, slightly crisp stir-fried veggies. To make the grilled chicken super flavorful, I usually marinate it for at least 30 minutes (or even overnight if I'm planning ahead!). My simple marinade includes a splash of low-sodium soy sauce, a tiny bit of minced garlic and ginger, and a dash of sesame oil. I cut the chicken breast into bite-sized pieces or thin strips before marinating, which helps it cook faster and absorb more flavor. Once marinated, I either grill it on a pan or my outdoor grill until it's perfectly cooked through with a nice char. Now, for the stir-fry part, the key is a good sauce! My secret is a simple blend of low-sodium soy sauce, a touch of honey or maple syrup for sweetness (which also gives it a hint of that 'sweet and sour' vibe people often look for, without all the extra sugar!), rice vinegar for a little tang, a bit more minced garlic and ginger, and a teaspoon of cornstarch mixed with water to thicken it up. This sauce coats everything beautifully and brings all the flavors together. When stir-frying the vegetables, I always make sure my wok or large skillet is super hot. I start with the harder vegetables like carrots and broccoli, giving them a few minutes head start, before adding the softer ones like bell peppers, snap peas, and thinly sliced red onion. It’s important not to overcrowd the pan so the veggies can properly sauté and get that lovely tender-crisp texture, instead of steaming. Cook them until they're vibrant and just tender – don't overdo it, or they'll lose their crunch! Finally, I add the grilled chicken back into the pan with the cooked vegetables, pour in my homemade stir-fry sauce, and toss everything together until the sauce thickens and coats all the ingredients. The aroma that fills my kitchen at this point is just heavenly! I usually serve this over a bed of fluffy brown rice or quinoa for a complete and wholesome meal. It’s such a satisfying #YummyDinner that leaves me feeling energized and happy. If you're looking for a #DELICIOUS and easy #menufortoday that truly supports your healthy goals, you absolutely have to give this grilled chicken and veggie stir fry a try!
