Here’s how to whip it up:
Ingredients:
• 6 oz grass-fed sirloin steak (sliced)
• 1 tbsp avocado or olive oil
• 1 cup zucchini (sliced)
• 1/2 cup cherry tomatoes (halved)
• 1/4 cup red onion (sliced)
• 1 cup baby spinach
• 2 garlic cloves (minced)
• 1 tsp rosemary
• Sea salt & pepper to taste
• Optional: squeeze of lemon
Directions:
1️⃣ Heat oil in a skillet over medium-high.
2️⃣ Season steak with salt, pepper, and rosemary. Sear 2–3 mins per side. Remove and set aside.
3️⃣ In the same pan, sauté garlic and onion for 1 min.
4️⃣ Add zucchini; cook 3–4 mins.
5️⃣ Add tomatoes and spinach; cook 2–3 mins until wilted.
6️⃣ Return steak to the pan, mix it all together, and finish with a splash of lemon 🍋
