... Read moreThis Lower-Carb Cajun Chicken Pasta is a perfect example of how you can enjoy rich and bold flavors while keeping carbs in check. Using EatBanza rigatoni, which is made from chickpeas, adds a significant protein boost and fiber, helping to maintain energy levels and satiety. I’ve found that seasoning the cooking water with chicken bouillon enhances the pasta’s flavor, making every bite more savory and satisfying. For the sauce, combining tomato paste, crushed tomatoes, ricotta cheese, and either half-and-half or heavy cream creates a luscious, creamy texture that balances perfectly against the smoky and spicy Cajun seasoning. The addition of pesto sauce adds an herby freshness that brightens the dish. Baking the chicken with a well-spiced Cajun rub, including smoked paprika and garlic powder, results in juicy pieces with a deep flavor that complements the pasta beautifully. Covering the chicken during the first phase of baking ensures it stays moist, while finishing uncovered develops a caramelized crust. When making this recipe myself, I like to keep some pasta water handy to thin the sauce if it gets too thick; it also helps the sauce cling better to the rigatoni. Using avocado oil mixed with butter for sautéing the onions gives a nice balance of flavors and healthy fats. This dish is ideal for those following a low-carb or low-carb diet, as it manages to be both hearty and nutritious without the excess carbohydrates found in traditional pasta dishes. It’s a great option for meal prep, reheating well and maintaining its delicious flavors. Overall, this Cajun chicken pasta offers a fantastic way to enjoy a protein-packed, flavorful meal with minimal carbs—definitely a go-to recipe for anyone wanting comfort food that fits a healthier lifestyle.
