Beef & Cheese Chimichangas w/ Mexican Rice

Chimichangas (actual recipe, I deviated 😅)

Ingredients:

1 lb ground beef

1 onion, finely chopped

1 pack taco seasoning

1/2 cup tomato sauce

1 (4oz) can green chiles

1 cup shredded cheddar cheese

1/2 cup refried beans (optional)

Tortillas

Vegetable oil

Instructions:

1. In a large skillet. Cook ground beef over med heat until browned, drain excess fat

2. Add onion & garlic, cook until translucent

3. Stir in taco seasoning, tomato sauce, green chiles. Cook another 2-3 minutes

4. Remove from heat, stir in cheddar until melted, set aside to cool

5. Warm tortillas

6. Place 1/4 cup of beef mixture in the middle of tortilla

7. Fold sides of tortilla, roll like burrito

8. In large, deep skillet, heat 1in of vegetable oil over med heat

9. Carefully place chimichanga seam side down in hot oil. Fry for 2-3 minutes or until golden brown

10. Remove from oil & place on paper towel lined plate to drain. Serve with favorite toppings

Mexican Rice:

Ingredients:

2 tbsp vegetable oil (I used butter, cause why not??)

1 cup long grain white rice

1 (8oz) can tomato sauce

2 cups water

Minced garlic

2 tsp Caldo de Tomate (tomato bouillon)

1 tsp chili powder

Instructions:

1. Heat oil in skillet over med heat. Add rice, stir to combine. Cook, stirring frequently until rice starts to turn golden brown

2. Add chili powder, Caldo de Tomate, stir to combine

3. Pour in water & tomato sauce, stir to combine

4. Bring to boil, reduce heat to low, cover. Summer for 20 mins or until all water is absorbed

5. Turn off heat & let rice rest for 5-10 mins

6. Fluff & serve
