Sourdough bagels are not only a delightful treat but also a healthier alternative to traditional bagels. Utilizing the natural fermentation process of sourdough, these bagels are packed with flavor and are easier to digest due to the pre-digestion of gluten. To make your sourdough bagels, start by preparing your sourdough starter at least a day prior. Combine high-quality bread flour with water and let it ferment until bubbly. Next, mix in additional flour, salt, and your ripe starter to form the dough. Knead thoroughly to develop gluten, which is essential for the bagels' chewy texture. After the first rise, shape your dough into bagels and allow them to rest. To achieve the iconic bagel texture, boil them in a baking soda solution before baking. This not only helps create that beautiful crunchy exterior but also enhances browning during baking. Once baked, enjoy your fresh sourdough bagels plain or topped with your favorite spreads and toppings. For extra flavor, consider adding ingredients like everything bagel seasoning, seeds, or even cheese into the dough. The versatility of sourdough bagels means there's a recipe for everyone. The recipe calls for Maple syrup. That is pure maple syrup and not pancake syrup. It doesn’t affect the taste. I just don’t use processed white sugar so I substituted.
