Sourdough bagels!!
Baking sourdough bagels at home has been one of my most rewarding kitchen projects. Unlike conventional bagels that use commercial yeast, sourdough bagels rely on natural fermentation, which not only enhances flavor but also improves digestibility. One of the key tips I've learned is the importance of maintaining a healthy sourdough starter. It needs to be active and bubbly before mixing the dough to achieve that perfect rise and chewiness. I typically refresh my starter the night before baking to ensure it’s at peak activity. When shaping the bagels, I find that gently stretching the dough balls into rings rather than rolling them out helps maintain the texture from the inside out. After shaping, I proof them for a couple of hours at room temperature, allowing the wild yeast to develop the signature tang that makes sourdough so special. Boiling the bagels briefly before baking is crucial for creating the shiny crust and slight chew. I sometimes add malt syrup to the boiling water to deepen the color and flavor. Lastly, baking on a preheated stone or steel gives the crust a delightful crunch. Using organic flour and natural ingredients, I notice a cleaner, richer flavor profile in the final bagels. It’s also rewarding knowing that the bread is free from additives. For anyone getting started, patience is key — sourdough bagels take longer to prepare than regular bagels, but the depth of flavor and texture is well worth the wait. Experiment with toppings like sesame seeds, poppy seeds, or everything seasoning to add variety.
