Elote nachos

how to make

(1) preheat oven to 350 degrees

(2) line a baking sheet with parchment paper & add tortilla chips

(3) grate some fresh cheddar cheese all over the chips - make sure they're all coated

(4) pop in the oven for about 5-7 minutes until the cheese has melted

(5) add a bag of thawed frozen roasted corn to a bowl (I used the one from Trader Joe's)

(6) add 2 heaping tbsp of mayo, sprinkle of tajin, pinch of salt & squeeze of 1/2 a lime

(7) mix until combined - taste for seasoning

(8) remove the chips from the oven & add the corn mixture all over the chips & place once more in the oven for about 4-5 minutes

(9) remove from the oven & add some fresh jalapeƱos, freshly chopped cilantro & a tad bit more Tajin
