Flavor-Packed Pork Chile Verde!

Tender pork simmered low and slow in a smoky homemade tomatillo sauce. So rich, bold, and cozy—you’ll want it on repeat all year long! 💚🌮

✅ Ingredients:

* 3 lbs pork loin or shoulder, cut in 1” cubes

* Salt & pepper

* 2 Tbsp vegetable oil

* 1 large yellow onion, chopped

* 3 garlic cloves, minced

* 1/2 Tbsp ground cumin

* 1/2 Tbsp dried oregano

* 2 cups chicken broth

* 4 poblano chiles, halved & seeded

* 2 jalapeños, halved & seeded

* 1.5 lbs tomatillos, husks removed

* 1/2 cup cilantro, chopped

👩‍🍳 Instructions:

1. Season pork with salt & pepper.

2. Sear pork in hot oil until browned; remove from pot.

3. Sauté onion, then add garlic, cumin, and oregano.

4. Return pork, add broth, cover and simmer 2–4 hours.

5. Broil tomatillos & peppers (cut side down) 7–10 mins.

6. Steam peppers in a bag 5 mins, then peel skins.

7. Blend peppers, tomatillos, and cilantro into a sauce.

8. Add sauce to pork and simmer 30–45 mins more.

9. Serve with warm tortillas, rice, and beans!
