Many raw vegetables contain natural compounds known as goitrogens and other plant defenses, which can irritate the gut, block mineral absorption, and interfere with thyroid enzymes. These compounds aren't harmful poisons but serve as the plant's defense system. Interestingly, cooking—such as stir-frying or steaming broccoli—can reduce these compounds significantly (studies show up to 78% reduction), making vegetables easier to digest and their nutrients more accessible. Personally, I've noticed that steaming vegetables for just about a minute and adding a bit of oil makes a huge difference in how comfortably my body processes meals. I feel less bloated and more energetic afterward. This method aligns with traditional East Asian practices, where cooked, warm foods are favored to stabilize core temperature, reduce gut stress, and support circulation, especially in humid climates. I realize that longevity and good health aren't about eating superfoods raw but about maximizing digestive efficiency, hormonal balance, and metabolic calm. Cooking vegetables doesn't mean compromising purity; it means cooperating with our biology for better nutrient usability. If you're struggling with digestion or feel sluggish after salads, consider experimenting with lightly cooking your vegetables. You might find that skipping raw bowls and embracing warm, steamed veggies revitalizes your energy and well-being.
