What I love about this recipe is how customizable it is — you can easily swap or add veggies based on what’s in season or what you have in your fridge. For example, adding cherry tomatoes or avocado can give the salad extra flavor and creaminess. When making quinoa, I always rinse it thoroughly to remove its natural coating called saponin, which can taste bitter. Cooking quinoa according to the package ensures you get fluffy grains that absorb the lime and olive oil dressing perfectly. The combination of fresh diced peppers, onion, corn, cucumber, and black beans not only adds vibrant colors but also provides a wonderful mix of textures and nutrients, including fiber and protein. One tip I found helpful is to let the quinoa cool completely before mixing it with the vegetables and dressing. This prevents the salad from becoming soggy and helps keep the fresh crunch of the veggies intact. I usually prepare a big batch and store it in the fridge for a couple of days. It makes a great lunch option on busy workdays or a refreshing side dish at barbecues.
