2 œufs, à température ambiante

2 c. à soupe (30 ml) de lait au choix

2 c. à soupe (30 ml) d’espresso

1/4 tasse (60 ml) d’huile d’olive

1/2 tasse (90 g) de sucre de coco

1 c. à thé (5 ml) d’extrait de vanille

2 tasses (480 g) de bananes très mûres écrasées (environ 4 grosses bananes)

1/3 tasse (30 g) de cacao

1 à 2 c. à thé de café instantané (au goût)

1 1/2 tasse (180 g) de mélange de farine sans gluten

1/2 tasse (50 g) de farine d’amande

1 c. à thé (5 ml) de bicarbonate de soude

1/2 c. à thé (2,5 ml) de sel

ajouts

1/2 tasse (80 g) de pépites de chocolat noir

1/4 tasse (40 g) de chocolat noir haché

instructions

préchauffez le four à 325°F (160°C) et tapissez un moule à pain de papier parchemin.

dans un mélangeur, combinez les œufs, le lait, l’espresso, l’huile d’olive, le sucre de coco, la vanille et les bananes écrasées. mélangez jusqu’à obtenir une texture lisse.

ajoutez le cacao et le café instantané, puis mélangez de nouveau jusqu’à ce que le tout soit bien incorporé.

dans un grand bol, mélangez la farine sans gluten, la farine d’amande, le bicarbonate de soude et le sel.

versez les ingrédients liquides dans les ingrédients secs et mélangez juste assez pour combiner.

incorporez les pépites de chocolat et le chocolat haché.

transférez la pâte dans le moule et lissez le dessus.

faites cuire pendant 55 à 60 minutes, ou jusqu’à ce qu’un cure-dent inséré au centre ressorte avec quelques miettes humides.

laissez refroidir complètement avant de trancher — c’est encore meilleur le lendemain.
