🍓 Chocolate Chip Strawberry Zucchini Muffins

Ingredients
* 1 cup grated zucchini (measure before squeezing excess moisture out)
* 2 cups all-purpose flour (oat flour can work too)
* ⅓ cup honey
* 1¾ tsp baking soda
* 1½ tsp salt
* ½ tsp cinnamon
* 1 large egg
* ¾ cup Greek yogurt (about 1 single-serve container)
* ⅔ cup unsweetened applesauce
* 1 cup diced strawberries
* ⅓ cup mini chocolate chips
Instructions
1. Preheat oven to 375°F. Line a muffin tin or lightly grease 12 muffin cups.
2. Grate zucchini, then gently squeeze out some excess liquid.
3. In a large bowl, whisk together: flour, baking soda, salt, and cinnamon.
4. In a separate bowl, mix: egg, honey, Greek yogurt, and applesauce.
5. Stir wet ingredients into dry ingredients until just combined.
6. Fold in zucchini, diced strawberries, and chocolate chips.
7. Divide batter evenly between 12 muffin cups.
8. Bake for 21 minutes, or until a toothpick inserted into the center comes out clean.
9. Cool slightly and enjoy!
