my No-Bake Chocolate Chip Cookie Dough Bark!

I just know you’re going to have this one on repeat!! You’ve got a chewy and easy to make (gluten-free!) cookie dough base, a smooth layer of chocolate, some flaky sea salt, pop it in the fridge aaaand there you have it! Easy to make, vegan & gluten-free and it’s the most INSANE (oven-less) dessert that will be there for you whenever you want it. Tag me when you make it - enjoy! This recipe went viral a couple years ago so I’m bringing it back :) ❄️🍫

Ingredients

1 cup almond flour, packed

3/4 cup almond butter

1/3 cup maple syrup

1 tsp vanilla extract

1/3 cup chocolate chips

1/2 cup chocolate chips

2 tsp coconut oil for topping

Flaky sea salt

Method

Line a baking sheet with parchment paper. In a medium bowl, combine all of the ingredients for the cookie dough. Transfer to the baking sheet and press down using your hands into a rectangle-ish shape about 1/4-1/2 inch thick. In a separate bowl, melt the chocolate chips and coconut oil together in your microwave in 15 second increments, stirring between intervals until completely glossy and smooth. Pour melted chocolate on top of the cookie dough and smooth until even, leaving about 1/4 inch around the edges. Add flaky salt on top and place in the fridge for about 30mins - 1hr, or until the chocolate has hardened. Slice into bars, and enjoy!

... Read moreOkay, so you've seen my super viral recipe for these amazing vegan no-bake cookie dough bars, and I know you're probably already hooked! But I wanted to dive a little deeper into why these bars have become such a staple in my kitchen and share some extra tips and tricks I've learned along the way. First off, let's talk about the magic of 'no-bake.' Seriously, for someone like me who loves to eat raw cookie dough straight from the bowl (guilty!), but sometimes wants a more structured dessert, these are a game-changer. Especially when it's scorching outside, and turning on the oven is the last thing you want to do. These bars come together so quickly; often in less time than it takes to preheat an oven! It's pure bliss to just mix, press, chill, and then enjoy a delicious treat. And being vegan and gluten-free? That's not just a bonus, it's a huge win! I often have friends over with different dietary needs, and it's wonderful to serve a dessert that almost everyone can enjoy without worry. The almond flour and almond butter base gives it such a rich, satisfying texture – you truly won't miss the traditional ingredients. Plus, knowing it's made with wholesome ingredients makes me feel a little better about reaching for a second (or third!) bar. Now, for those looking to perfect their batch, here are a few things I've picked up: Ingredient Quality Matters: While the recipe is forgiving, using good quality almond butter and chocolate chips really elevates the flavor. I prefer a natural, unsweetened almond butter for the base. For the chocolate topping, a good quality vegan dark chocolate makes all the difference. Pressing the Base: When you're pressing the cookie dough base onto your parchment-lined baking sheet, make sure to press it down firmly and evenly. This ensures that your no-bake cookie dough bar holds its shape well and gives you a consistent texture throughout. You can even use another piece of parchment paper on top and a rolling pin to get it super smooth and even. Melting Chocolate: My trick for a super smooth chocolate topping is to melt the chocolate chips with coconut oil very gently. Overheating can make it seize up. Stirring every 15 seconds in the microwave, as mentioned in the recipe, is key. If you're feeling fancy, a double boiler works wonders too! The Flaky Sea Salt: Don't skip this! That touch of flaky sea salt on top of the chocolate topping isn't just for looks; it really enhances all the flavors and balances the sweetness perfectly. It’s that little extra something that makes these bars irresistible. Storage: These bars keep beautifully in an airtight container in the fridge for up to a week. Honestly, they rarely last that long in my house! They're also fantastic straight from the freezer for a firmer, almost fudge-like texture. Want to get creative? Try swapping out some of the chocolate chips in the dough for other mix-ins like chopped nuts, dried cranberries, or even some sprinkles for a fun twist. You could also experiment with different extract flavors like peppermint or orange for a seasonal touch. These vegan cookie dough bars aren't just a dessert; they're a little moment of joy, a quick fix for cravings, and proof that healthy-ish treats can be absolutely delicious. I hope these extra insights help you love them even more!
