I've found that even a short brining period makes a huge difference. Here’s how I do it: Prepare the Brine: In a large pot, I combine about 1 gallon of water with half a cup of kosher salt, a quarter cup of brown sugar, a few bay leaves, a tablespoon of black peppercorns, and a sprig or two of fresh rosemary or thyme.
