easy one-pan dinner
My husband works late two nights a week so I’m on my own for dinner. I have a habit of just grazing on snacks on those nights, but I’m trying to do better. Tonight I decided to make a recipe I’ve been wanting to try that he wasn’t interested in - hassleback caprese chicken. It’s a simple baked chicken recipe but it really packs in the flavor!
All this dish is is a chicken breast that I sliced almost all the way through and stuffed with tomato and mozzarella. I brushed the whole thing with pesto and baked it at 375 for 25 minutes - and that’s it! I roasted some broccoli along with the chicken and it turned out to be an excellent meal.
