Itās not just delicious; itās quick to put together, packed with flavor, and keeps me going for hours. For me, the magic starts with the tortilla con frijoles ā itās such a classic and comforting base. I usually warm up some corn tortillas on a dry comal or pan until they're soft and slightly pliable. Then, I spread a generous layer of warm refried beans on them. Sometimes, Iāll even mash whole black beans with a little garlic and onion for a fresher twist. The key is to get those beans perfectly seasoned and creamy. This combination alone is a powerhouse of fiber and protein, making it incredibly filling. Next up are the eggs, or *huevos*. I love them scrambled, light, and fluffy, seasoned simply with salt and pepper. Sometimes, Iāll fry an egg sunny-side up so the yolk can run over everything ā pure bliss! They're also packed with nutrients and fiber. If you can't find them, don't worry, the meal is still fantastic, but I highly recommend giving them a try if you see them at your local Latin market. And finally, the aguacate ā creamy, ripe avocado. No Mexican-inspired meal feels complete without it! I simply slice or dice it and pile it on top.
