Chocolate Covered Date and Nut Truffles

These healthy Date and Nut Truffles are the perfect guilt-free and nutritious sweet treat! Packed with natural sweetness from dates and a satisfying bite from nuts. Made with only 5 ingredients, they are a delicious energy boosting treat that will satisfy your sweet tooth.

—Ingredients—

25 medjool dates

1/2 cup raw almonds

1/2 cup pecans or walnuts

1/2 cup pistachios

2 cups Ghirardelli milk or dark chocolate melting wafers

Sea salt Flakes

1. Dry roast the nuts in a frying pan on medium for 3 to 4 minutes stirring constantly, then allow them to cool.

2. Take the pits out of the dates. Add the dates into a food processor and pulse until chopped and it looks like a paste.

3. Next add in the nuts then pulse again until nuts are chopped coarsely and the mixture is well combined.

4. Take one to two tablespoons of the mixture into the palm of your hands and tighly press the mixture together and then roll into balls.

5. Melt the chocolate according to the package instructions.

6. Add each ball into the melted chocolate, gently roll to coat evenly and take it out with a fork allowing any excess chocolate to drip down. Place the chocolate covered balls on a parchment lined dish.

7. Drizzle the remaining chocolate on top, sprinkle with sea salt flakes and enjoy!
