Sweet Potato Apple Chicken Breakfast Sausage
Ingredients
* 1 lb ground chicken
* ½–¾ cup cooked sweet potato, mashed
* ½ cup apple, finely grated or very finely diced
* 1–2 tablespoons maple syrup (to taste)
* 1 teaspoon salt
* ½ teaspoon black pepper
Optional but really good if you have them:
* 1 teaspoon ground sage
* ½ teaspoon cinnamon
* ¼ teaspoon nutmeg
* ½ teaspoon garlic powder or onion powder
* Pinch of paprika or cayenne (skip if you don’t want heat)
Grate or finely chop the apple and mash the cooked sweet potato.
Mix ground chicken, sweet potato, apple, maple syrup, salt, pepper, and any spices.
Form into small patties.
Cook in a lightly oiled skillet over medium heat, about 4–5 minutes per side, until fully cooked.
