Focaccia Lemon Matcha Dot “cake”
So I don’t like cake. I do like focaccia though so I thought might as well make a focaccia dot cake for this challenge. I used homemade sourdough focaccia, lemon matcha glaze and the dot sprinkles. I would rate this a 7/10. I could definitely have done this better (and it was so far off what my original plan was. I might do my original plan as well later). For the lemon matcha glaze, I should not have had as much lemon juice as it overtook the flavor. And I should have toasted the focaccia more.
Recipes-
Sourdough focaccia:
75g active starter
375g warm filtered water
20g sugar or honey
500g bread flour
9g sea salt

Lemon matcha glaze:
1tbsp lemon juice
1tsp matcha
1tbsp water
As much powdered sugar until the texture resembles slightly looser than toothpaste.
Assemble focaccia into a ramekin, layer lemon matcha glaze and round sprinkles, another layer of focaccia, and top with lemon matcha glaze and round sprinkles.
