Easy veggie curry 🍛

This quick and easy veggie curry recipe came from an old school vegetarian cookbook. I didn’t have a lot of ingredients in my cupboard and wanted to make something quick for dinner. I knew I had rice and potatoes so when I looked in my cookbooks I found this simple recipe for vegetable curry.

I started by cooking some rice 🍚 then I boiled some water and added a few peeled and chopped potatoes 🥔 . I also added a couple chopped carrots 🥕 and let that boil for 15 minutes. I also put a vegetable bouillon cube in the water for the potatoes and carrots.

Next I chopped a red and white onion 🧅 and cooked that in a pan with a little olive oil. I peeled and chopped an apple to add to the onions. I let that cook for a few minutes and added 3 tablespoons of curry powder and 3 tablespoons of flour.

I slowly poured in the veggie water from the potatoes and carrots and let that simmer with the onions and apple till it thickened. Finally, I added the cooked potatoes and carrots and served it over rice.

I think this came out better than I expected. I wasn’t sure about how the apple would change the flavor but it was actually perfect tasting. Depending on the kind of curry this recipe can be made spicier but I liked the mild and savory taste of how this one turned out.
