Banana Bread Cookie Cake
I create this banana bread cookie cake because it is the ultimate comfort mashup. bridging the gap between a nostalgic loaf of banana bread and the indulgent cookie. It is designed to be the centerpiece of a gathering.
Ingredients
For the Banana Bread Cookies
* 1 cup unsalted butter, softened
* 1 cup brown sugar, packed
* 1/2 cup granulated sugar
* 1 large egg, room temperature
* 2 teaspoons vanilla extract
* 1 cup mashed overripe bananas (about 2-3 medium bananas)
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1 1/2 cups semi-sweet chocolate chips or chunks
For the Browned Butter Frosting
* 1/2 cup unsalted butter
* 3 cups powdered sugar
* 1 teaspoon vanilla extract
* 2-3 tablespoons heavy cream
* A pinch of salt
For the Assembly
* Salted caramel sauce for drizzling
Instructions
1. Brown the Butter: In a small saucepan, melt 1/2 cup of butter for the frosting over medium heat. Whisk constantly until the butter turns a deep golden brown and smells nutty. Immediately remove from heat and pour into a bowl to cool and solidify slightly.
2. Prepare the Cookie Layers: Preheat your oven to 350°F. Line three 8-inch round cake pans with parchment paper and grease the sides.
3. Cream the Base: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg, vanilla, and mashed bananas.
4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet ingredients until just combined. Fold in the chocolate chips.
5. Bake: Divide the dough evenly between the three prepared pans, smoothing the tops. Bake for 20-25 minutes, or until the edges are golden and a toothpick inserted into the center comes out mostly clean. Let the layers cool completely in the pans.
6. Make the Frosting: Beat the solidified browned butter until creamy. Gradually add powdered sugar, vanilla, salt, and heavy cream. Whip until the frosting is light and stiff enough to hold a decorative peak.
7. Assemble: Place the first cookie layer on a stand. Use a piping bag with a star tip to create a ring of frosting dollops around the edge and fill the center. Drizzle with salted caramel. Repeat with the second and third layers. Finish the top layer with a decorative border of frosting dollops and a final, generous drizzle of caramel.
Pro Tip
Before serving, hit the caramel drizzle with a very light sprinkle of Maldon sea salt to make the chocolate and banana flavors pop.
