Ingredient 1 & Portion: 1 egg

Ingredient 2 & Portion: baby oatmeal & 1/4 cup

Ingredient 3 & Portion: 2 ounces of baby food, your choice

Detailed Steps: mix all together in a bowl, heat up your pan to the number 5 on the stove, butter up the pan, use a baby spoon or small spoon to portion your sizes of the pancakes, flip over.

Additional Tips: you can put a small drop of syrup on it if you feel like it but I didn’t because she makes a big mess already.

Beyond the basic recipe, I've found a few tricks to make these even better and more versatile. For instance, while the original recipe is great, you can easily swap out the baby food for mashed banana, pumpkin puree, or even finely grated zucchini for an extra veggie boost. My daughter often loves when I add a tablespoon of mashed banana; it gives a natural sweetness without any added sugar. You can also experiment with different types of baby oatmeal or even finely ground oat flour for a different texture. For an added nutritional punch, sometimes I'll mix in a tiny pinch of chia seeds or flax meal into the pancake batter. These are great sources of omega-3s and fiber. If your baby is a bit older and you're looking to boost protein, you could even add a tablespoon of plain Greek yogurt to the mix. Just be mindful of consistency – you want the batter to be thick enough to hold its shape but still pourable. I usually prepare my baby pancake batter right on my kitchen counter, it’s quick and easy to clean up. Batch cooking baby pancakes is a lifesaver for busy parents. I often make a bigger batch than needed and then store the extras. Once they’ve cooled completely, you can place them in an airtight container in the fridge for up to 2-3 days, or freeze them for longer storage. To freeze, lay them flat on a baking sheet to prevent sticking, then transfer them to a freezer-safe bag.
