3 large chicken breasts, cut lengthwise into thinner cutlets
Salt & black pepper, to taste
1 Tbsp olive oil
4 Tbsp (½ stick) butter, divided
8 oz cremini mushrooms, sliced
2 cloves garlic, minced
2 Tbsp all-purpose flour
½ cup dry sherry
1½ cups heavy cream
6 slices Muenster cheese

1️⃣ Season the chicken with salt and pepper. Dredge lightly in flour and shake off excess.
2️⃣ Preheat your oven to 375 °F (190 °C).
3️⃣ Heat olive oil and 1 Tbsp butter in a skillet over medium-high. Brown the chicken 3-4 minutes per side until golden. Transfer to a 9×13-inch casserole dish.
4️⃣ In the same skillet, melt 2 Tbsp butter. Add mushrooms and cook ~5 minutes, until browned and their moisture has evaporated. Transfer mushrooms to the dish with the chicken.
5️⃣ Melt the remaining 1 Tbsp butter in the skillet. Add garlic and cook ~1 minute. Stir in flour and cook ~1 minute to make a roux.
6️⃣ Pour in sherry, whisking to deglaze the pan, then add heavy cream. Simmer until sauce thickens slightly. Season with salt & pepper.
7️⃣ Pour the creamy mushroom-sherry sauce over the chicken and mushrooms. Layer the cheese slices on top.
8️⃣ Cover with foil and bake ~20 minutes. Remove foil and broil 2-3 minutes until cheese is bubbly and golden. Let rest a few minutes before serving.
