Ingredients:
2 lbs boneless, skinless boneless chicken thighs
3/4 cup BBQ sauce (sugar-free or regular)
12 oz fresh green beans, trimmed
1 large sweet potato, peeled and cubed
2 medium red potatoes, cubed
1 small onion sliced
1 tbsp olive oil
Season – I use Spike (suggestions: garlic powder, paprika, Italian seasoning)
Salt and black pepper to taste
Instructions:
Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Season the chicken: Pat dry and coat with 1/2 cup BBQ sauce. Reserve the remaining sauce for basting.
Prepare the veggies: Toss sweet potatoes, red potatoes, and green beans with olive oil and seasonings.
Bake: Arrange the chicken and veggies in a single layer on the sheet pan. Bake for 40-45 minutes.
Baste the chicken: Brush the remaining BBQ sauce over the chicken and bake for an additional 5 minutes until the chicken reaches an internal temperature of 165°F.
