... Read moreSnickerdoodles are a classic, beloved cookie known for their soft texture and distinctive cinnamon-sugar coating. Traditional snickerdoodle recipes often include cream of tartar, which helps give the cookies their signature tangy flavor and chewy texture. However, many home bakers prefer to skip cream of tartar due to its uncommon use in everyday cooking and may opt for baking soda and other ingredients to achieve a similar effect.
In this recipe, the omission of cream of tartar is cleverly balanced by the use of baking soda and salt, resulting in a light and tender cookie. Adding pumpkin spice to the cinnamon and sugar coating is a delightful seasonal twist, enhancing the aroma and taste with warm notes of cinnamon, nutmeg, cloves, and ginger—perfect to complement fall vibes.
For best results, ensure your butter is softened to room temperature before creaming it with sugars; this step is crucial for the ideal cookie texture. The gradual increase in mixer speed allows ingredients to combine evenly without overworking the dough. Additionally, chilling the dough slightly before baking can help cookies hold their shape and produce even better texture.
Because these snickerdoodles bake quickly at 350°F for 10-12 minutes, keep an eye on them to prevent overbaking. The edges should be set while the centers remain soft for that melt-in-your-mouth quality.
If you don’t have pumpkin spice handy, simply use extra cinnamon in the coating for that classic snickerdoodle flavor. These cookies pair wonderfully with a cup of apple cider or a pumpkin latte, making them a cozy treat to celebrate the arrival of fall. Whether baking for family, friends, or yourself, this recipe makes snickerdoodle baking easy, accessible, and festively flavorful.
Also i measure out 2 tablespoons of cookie dough to roll up in the the cinn-sugar mixture!
