Ingredients
For the Chicken:
1 lb (450 g) boneless, skinless chicken breasts (thinly sliced)
1/2 cup all-purpose flour (for dredging)
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
For the Marsala Sauce:
2 tablespoons unsalted butter
3 cloves garlic, minced
8 oz (225 g) mushrooms, sliced (cremini or button)
1 cup Marsala wine (sweet or dry)
1 1/2 cups chicken broth
1 cup heavy cream
1/2 teaspoon dried thyme
Salt and pepper to taste
For the Pasta:
12 oz (340 g) penne or fettuccine
Fresh parsley, chopped (for garnish)
Grated Parmesan cheese (optional)
Instructions
Cook the Pasta:
Boil a large pot of salted water. Cook the pasta until al dente, according to package instructions. Drain and set aside.
Prepare the Chicken:
Season the chicken with salt and pepper, then dredge in flour, shaking off excess.
Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken for 3-4 minutes per side, until golden brown and cooked through. Set the chicken aside.
Make the Marsala Sauce:
In the same skillet, melt 2 tablespoons butter. Sauté garlic and mushrooms for 5-6 minutes, until the mushrooms soften and brown.
Add Marsala wine, scraping the browned bits. Simmer for 2-3 minutes, reducing slightly.
Stir in chicken broth, heavy cream, thyme, salt, and pepper. Let the sauce simmer for 5-6 minutes until thickened.
Combine the Pasta and Chicken:
Slice the chicken and return it to the skillet. Stir to coat the chicken in the sauce.
Add the cooked pasta and toss to coat with the creamy Marsala sauce.
Serve:
Plate the pasta, garnishing with fresh parsley and Parmesan.
