This chicken sheet pan dinner is one of my go-to recipes when I want a wholesome, no-fuss meal that’s both nutritious and delicious. One tip I’ve found helpful is to dice the chicken tenderloins into uniform pieces so they cook evenly alongside the vegetables. Starting the potatoes alone in the oven helps ensure they become perfectly tender since they take longer to cook than the other ingredients. I also love using a blend of garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. This combination adds a nice depth of flavor without overpowering the natural taste of the chicken and veggies. Using olive oil not only helps with roasting but also contributes healthy fats. For a bit of variety, sometimes I swap out the broccoli florets for green beans or asparagus depending on what’s in season. You can even add a squeeze of fresh lemon juice or sprinkle some freshly chopped herbs like parsley right before serving to brighten the flavors. Meal prepping this dish on Sundays allows me to have ready-to-eat portions that I can quickly reheat during the busy workweek. Plus, it’s an excellent way to get a balanced mix of protein, fiber, and vitamins all in one pan. I recommend lining your sheet pan with parchment paper for easier cleanup and to prevent sticking. Overall, this recipe is a great example of a whole food meal prep that’s easy to make, customizable, and perfect for maintaining a healthy eating routine without spending hours in the kitchen.
