Ep # 2: Basil Pesto Pasta 🌿✨
- 8 ounces pasta
- Few tablespoons basil pesto (recipe down below👇🏼)
- Pasta water
- Parmesan cheese
- Fresh basil to garnish
Basil Pesto:
- 1 1/2 cups fresh basil
- 3 garlic cloves, smashed
- 1/8 teaspoon salt
- 1/4 cup pine nut oil
- 2 tablespoons unsalted butter, room temp
- 1/2 cup parmesan cheese
- 1/4 teaspoon red chili flakes
Directions:
1. Make the pine nut oil. Heat together 1/4 cup olive oil and 2 tablespoons of pine nuts over low heat until the pine nuts turn golden. Set aside and let it cool.
2. In a food processor, combine basil, garlic, salt, and pine nut oil and blend.
3. Add butter and process until desired consistency. I like mine to be smooth.
4. Transfer to a bowl, add the parmesan cheese and chili flakes. Mix well.
5. Add few tablespoons to cooked pasta with some pasta water, combine well until desired consistency.
6. Serve immediately with more parmesan on top. Enjoy!

You know, since sharing my go-to basil pesto pasta, I've had so many of you ask about making it even healthier or trying different twists! And honestly, that's what cooking is all about – making a dish your own. One common question I get is about using whole grain pasta with pesto, and I'm here to tell you, it's a fantastic idea! It really elevates the dish, adding a lovely nutty flavor and, of course, extra fiber and nutrients. When I started experimenting with whole grain pasta for my pesto dishes, I was a little worried it might not have the same delightful texture or might overpower the fresh basil. But I found that with a few simple tricks, it can be just as amazing, if not better! The key is to choose a good quality whole grain pasta – I often look for brands that have a slightly rougher texture, as this helps the pesto cling perfectly. And don't overcook it! Whole grain pasta can sometimes go from al dente to soft quicker than regular pasta, so keep a close eye on it. I always taste it about a minute or two before the package directions suggest. That slightly chewy texture combined with the smooth, vibrant pesto is just divine. It makes this summer dinner idea feel even more wholesome and satisfying. Beyond the pasta itself, there are so many ways to customize your pesto pasta to suit your mood or what you have on hand. While my basil pesto recipe is a timeless classic, don't be afraid to get creative! For a different flavor profile, you could try swapping out some of the basil for spinach or arugula in your pesto – it adds a slightly peppery kick. I also love to toss in some extra veggies. Cherry tomatoes, halved and roasted until bursting, or sautéed zucchini ribbons are fantastic additions that bring even more freshness and color, making it an even more perfect 'summer dinner idea'. Sometimes, I even add in grilled chicken, pan-seared shrimp, or even some chickpeas for a protein boost, transforming it into a complete meal. Another tip I've picked up over the years is making the pesto in a larger batch. It stores beautifully in the fridge for up to a week (just cover the top with a thin layer of olive oil to prevent browning) or you can freeze it in ice cube trays for quick portions whenever a pesto craving hits. Imagine having homemade pesto ready to go for a lightning-fast weeknight meal! This definitely makes meal prep a breeze. And finally, don't forget about garnishes and pairings! A sprinkle of extra Parmesan (or nutritional yeast for a dairy-free option), a few fresh basil leaves, and a crack of black pepper are always welcome. For a complete summer spread, I love serving my pesto pasta with a simple side salad dressed with a light vinaigrette and some crusty bread to soak up any leftover pesto. It’s truly a versatile dish that can be as simple or as elaborate as you like, and it always tastes like sunshine on a plate. I hope these extra tips inspire you to explore new variations and make this delicious basil pesto pasta a regular in your summer rotation!
