🥒🍗 Cucumber Chicken Bowls

🛒 Ingredients (Serves 5)

2 cups uncooked rice (or about 6 cups cooked)

1½ lbs chicken breast or thighs, diced

2 large cucumbers, diced

2 tomatoes, diced (optional)

1 tbsp olive or avocado oil

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt & pepper to taste

🥣 Simple Sauce

½ cup plain Greek yogurt or sour cream

1 tbsp lemon juice

1 tsp garlic powder

1 tsp dried dill (optional)

Pinch of salt

👩‍🍳 Directions

1️⃣ Cook rice according to package directions.

2️⃣ Toss chicken with oil, garlic powder, onion powder, paprika, salt, and pepper.

3️⃣ Cook chicken in a skillet over medium-high heat for 8–10 minutes, until cooked through.

4️⃣ While chicken cooks, dice the cucumbers and tomatoes.

5️⃣ Mix together all sauce ingredients in a small bowl.

6️⃣ Build bowls:

Rice on the bottom

Chicken on top

Cucumbers and tomatoes

Drizzle with the sauce

Shredded lettuce

Feta cheese

Red onion

Avocado

A sprinkle of parsley
