Chick'n alfredo | cook with me ✨

This was a very fun way to spend my morning! Yesterday I made some seitan and of course chicken alfredo came to my mind☺️

Anyways, this is a good recipe if you want a heafty bite✨️.

Here is the recipe for a vegetarian Chikin Alfredo with homemade noodles and sauce. This makes 1-2 servings ⬇️

Homemade Noodles:

100g all-purpose flour

1g salt

30g eggs (or egg substitute, like flaxseed or aquafaba)

30g water

Alfredo Sauce:

25g Butter (or margarine)

25g all-purpose flour

125g buttermilk

30g Pasta water

25g grated Parmesan cheese (using microbial rennet, like Kraft)

Salt ,pepper, garlic, Italian seasoning to taste

Instructions:

1. Make the homemade noodles:

Combine flour, salt, eggs (or substitute), and water. Mix, knead, and rest(15-20 minutes). Roll out, cut into fettuccine-style noodles, and cook.

Something I did was add vegan chicken stock to the pasta water and drizzle a little olive oil! It brings more flavor❗️

2. Make the Alfredo sauce:

Melt butter, add flour mixed with garlic powder to make a roux, then slowly add buttermilk, whisking continuously. If it's too thick, add in splashes of pasta water. Bring to a simmer, add Parmesan cheese, salt, and pepper(and other seasonings you may want. I did Italian seasoning, garlic, and a tiny bit of adobe. I also added in some nooch, but that was because i didn't have enough Parmesan).

3. Assemble:

Combine cooked noodles, Seitan "Chicken," and Alfredo sauce. Enjoy!

I recommend you serve some broccoli on the side 😩 cause even though this is protiened up (should be about 60g of protien) this is a very heavy MEAL. Lol, not snack, MEAL. Either way, we'll enjoy it all the same <3 Thx for reading and hope you enjoy!!
