Fried Chicken
This is some gooood fried chicken. I only know that he used egg, flour, and double dipped. I don't know the spices he used. And wow, when your ears are plugged up and you can't hear well, I almost sound drunk. 😂 No wonder everyone keeps asking me to repeat myself. In the mac n cheese, I added to each layer minced up jalapenos that we sliced and put into the jars of pickle juice after the pickles were gone. It's been marinating only for a month though, but wow! They're still so good! 😋

From my experience, the secret to making truly crispy fried chicken lies in the double-dipping technique the author mentioned—dipping the chicken pieces into an egg wash and then flour twice before frying. This creates an extra thick and crunchy coating that seals in the juices and gives a mouthwatering texture. While the exact spices weren’t shared, common spices such as paprika, garlic powder, onion powder, cayenne pepper, and black pepper can be added to the flour to build depth and heat. Another game-changing tip I’ve found is to let the chicken rest for a few minutes after the second flour dip before frying. This helps the coating adhere better during cooking, preventing it from peeling off. As for the mac and cheese, incorporating minced jalapeños that have been marinating in leftover pickle juice is a brilliant idea. The acidity and spice from the pickled jalapeños enhances the creamy cheese sauce with layers of tang and heat, making each bite exciting. Letting the jalapeños marinate for at least a few weeks, like the author’s month-long fermentation, mellow the pepper’s sharpness while intensifying its flavor. When recreating this combo at home, try slicing fresh jalapeños and pickling them in a mixture of leftover and fresh pickle juice with a bit of sugar and salt. Then add them in layers into your macaroni and cheese just before baking. It’s a unique way to elevate a classic comfort dish. One funny yet relatable moment the author shared was how plugged ears made them sound almost drunk, which everyone noticed. Cooking with friends or family can definitely come with those lighthearted moments of having to repeat yourself! Overall, this recipe offers a creative spin on traditional fried chicken and mac and cheese, highlighting simple kitchen hacks and flavorful pickling techniques that anyone can try at home for a memorable meal.
