I love chocolate pudding, and I love chia pudding! I decided that i would combine the two, and it turned out wonderfully. Here’s my recipe:
Ingredients 🛒:
• 4 tbs chia seeds
• 2 tbs coco powder
• 1 can coconut milk
• 4 tbs maple syrup
• 1 tsp vanilla extract
• pinch salt
Directions 👩🍳:
1️⃣ Add coconut milk and coco powder to a medium bowl, and whisk until there are no clumps.
2️⃣ Add in chia seeds, vanilla, maple syrup, and salt. Mix again until well combined. Wait 3 minutes, and then whisk again to make sure there are no clumps.
3️⃣ Pour into a jar, and refrigerate for at least 4 hours, or up to overnight.
4️⃣ Top with toasted coconut flakes, and enjoy!
Chef’s Tip 💡:
• You can top this with whipped cream, cherries, or raspberries! Whatever you like.
• Adjust the coco powder to your liking. Make it as chocolaty as you want!

The use of chia seeds not only adds a delightful texture but also packs a nutritional punch with fiber, omega-3 fatty acids, and protein — making this dessert an excellent guilt-free treat.
For the cocoa powder, you can opt for unsweetened or raw cacao powder, depending on how rich and intense you want your chocolate flavor to be. I’ve found that starting with 2 tablespoons works well for a balanced chocolatey taste, but feel free to add more if you want a deeper chocolate experience. Maple syrup is my go-to natural sweetener here, but you can substitute with honey, agave nectar, or even a sugar alternative if you prefer.
Using full-fat canned coconut milk gives the pudding a creamy, luscious texture akin to traditional mousse without the dairy. If you like, shaking the can well before opening helps mix the cream and liquid evenly to prevent separation.
Waiting 3 minutes after adding chia seeds before whisking again is a little trick I picked up: it prevents clumping and ensures the pudding will set with a smooth, mousse-like consistency. Sometimes I add a pinch of salt to enhance the chocolate flavor, and vanilla extract brings a subtle sweetness that rounds out the dish beautifully.
One of my favorite ways to enjoy this pudding is topped with toasted coconut flakes, fresh berries like raspberries or cherries, or a dollop of whipped cream — all recommended by the original recipe creator. It truly elevates the dessert, adding texture and burst of freshness.
If you prefer a lower-calorie option, using light coconut milk or almond milk can work, though the texture may be slightly less rich. This recipe is great for prepping ahead since it needs at least 4 hours to set in the refrigerator, but it’s even better when made overnight.
Overall, merging the classic chocolate mousse with the nutritious benefits of chia pudding creates a dessert that’s both indulgent and mindful. It’s ideal for those who want to enjoy chocolate without the heavy cream or eggs typically found in mousse. Give this recipe a try next time you crave something chocolaty yet healthy — it’s fast, easy, and adaptable!
