• 3 large eggs
• 2 tsp vanilla extract
• 2 cups finely grated carrots
• ½ cup crushed pineapple (drained) (optional but makes it extra moist)
• ½ cup chopped walnuts or pecans (optional)
Preheat oven to 350°F. Grease and flour a Bundt pan well.
2. In a large bowl, whisk together flour, sugars, baking soda, spices, and salt.
3. In another bowl, mix mayonnaise, eggs, and vanilla until smooth.
4. Add wet ingredients to dry and stir just until combined (don’t overmix).
