It’s become my ultimate go-to for a healthy, incredibly flavorful, and super easy weeknight dinner. Trust me, once you try this method, you'll be making it all the time. What I love most is how simple the ingredients are. You just need some fresh salmon fillets – I usually go for skin-on because it helps keep the fish moist, but skin-off works too! The star of the show is definitely that orange pepper seasoning. I always keep a good orange pepper seasoning shaker in my pantry, it’s a game-changer. Beyond that, a little olive oil, salt, and pepper, and some fresh orange slices and red bell pepper strips for garnish and extra flavor. My absolute favorite hack for this recipe, and what makes cleanup a breeze, is using a *foil pan*. Seriously, it's a lifesaver! I just line a baking sheet with foil or use a disposable foil pan. This not only makes cleanup effortless but also helps steam the salmon slightly, keeping it incredibly tender and juicy. I arrange my salmon fillets in the pan, drizzle with a little olive oil, then generously sprinkle with the orange pepper seasoning. Don’t be shy here – that's where all the magic happens! Then, I tuck in those fresh orange slices and red bell pepper strips around the salmon. Sometimes I even squeeze a little fresh orange juice over everything before baking. I bake it in a preheated oven at about 400°F (200°C) for 12-15 minutes, depending on the thickness of the fillets. You'll know it's done when it flakes easily with a fork. The aroma filling your kitchen will be incredible! As it bakes, the juices from the salmon, the orange, and the seasoning blend together to create this amazing rich sauce at the bottom of the pan. I like to spoon that over the salmon when serving – it's pure gold! This dish pairs beautifully with roasted asparagus, a simple side salad, or some fluffy couscous. It’s light, satisfying, and packed with nutrients. For an extra kick, sometimes I'll add a pinch of red pepper flakes to the seasoning mix.
