lemon muffins 💫💫
Try these delicious lemon muffins perfect for any occasion!!
Recipe:
• 3 lemons,zested
• 1 line, zested
• 200g sugar
• 100 ml vegetable oil
• 75g melted butter
• 150ml whole milk
• lemon extract
• 1 egg
• 300g self raising flour
• 200g lemon curd (I’ll place a link down below for the lemon curd recipe i found)
• powdered sugar
• water
1. Start by preheating your oven to 350F and grease or line your muffin tin.
2. In bowl, add your zested lemons(3), and your zested lime(1) and sugar(200g). And hand mix together, be sure to rub the sugar into the lemons and lime zest.
3. Next, add your melted butter(75g), oil(100ml), whole milk(150ml), splash of lemon extract and 1 egg. Mix until combined.
4. Add your self raising flour(300g), be careful not to over mix. Over mixing will lead to dense muffins. Mix just enough so you cannot see any flour left.
5. Add the batter into your greased tin or your muffin cups. Add about 2 spoonfuls each.
6. Bake muffins for about 20-22 minutes or until toothpick inserted comes out clean.
7. Once baked, allow muffins to cool for about 15 minutes on a wire rack before adding your lemon curd.
8. Once cooled, get a straw and make holes in the center of the muffin, be sure to make the hole big enough to have space for the lemon curd.
9. Next, fill a piping bag with lemon curd and fill the holes.
10. Lastly make your icing, 100g powdered sugar plus 2 tablespoons of water. Drizzle the icing on top and dust with powdered sugar
