Lemon Loaf Cake✨🍋

Ingredients:

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

3 large eggs

1 cup granulated sugar

2 tablespoons butter, softened

1 teaspoon vanilla extract

2 tablespoons lemon zest

1/3 cup lemon juice

½ cup sour cream

½ cup vegetable oil

For the Glaze:

1 cup powdered sugar

2-3 tablespoons lemon juice

Directions:

Prepare the Loaf Batter: Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside. In a large mixing bowl, whisk eggs, sugar, butter, vanilla extract, lemon zest, and lemon juice until smooth and well combined. Gradually add sour cream and vegetable oil, whisking until fully incorporated. Slowly add the dry ingredients to the wet mixture, stirring until just combined.

Bake the Loaf: Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes, then remove and place on a wire rack to cool completely.

Prepare the Glaze: In a small bowl, whisk together powdered sugar and lemon juice until smooth and pourable. Adjust the consistency by adding more lemon juice if needed. Drizzle the glaze over the cooled lemon loaf and let it set before slicing.
