Hey everyone! Just finished prepping for a delicious batch of Shiro Plum Basil Jam, and I couldn’t wait to share the process with you all. 🍑✨

Why Shiro Plums?

Shiro plums are a delightful, sweet variety that pairs perfectly with the aromatic notes of fresh basil. The result is a jam that's both tangy and sweet, with a hint of herbaceous goodness.

Ingredients:

3 Shiro plums, pitted and chopped

1 cup sugar

2 tbsp fresh basil, finely chopped

1 tbsp lemon juice

Steps:

In a saucepan, combine the plums, sugar, and lemon juice. Let it sit for about 30 minutes to macerate.

Tomorrow, I’ll bring the mixture to a boil over medium heat, stirring occasionally.

Reduce the heat and let it simmer until thickened, about 20-25 minutes.

Stir in the fresh basil just before removing from heat.

Let it cool slightly before transferring to jars.

Tips:

Taste as you go to adjust the sweetness.

If you like a smoother texture, use an immersion blender before adding the basil.

This jam is fantastic on toast, in yogurt, or even as a glaze for meats!

Now, let's talk about taking those lovely ingredients from a bowl of promise to a jar of pure delight. I’ve learned a few tricks along the way to ensure my jam turns out perfectly every time, and I can't wait to share them with you! Once your plum mixture has had its resting time, it's go-time! Transfer everything to a heavy-bottomed saucepan. The key here is a pan that distributes heat evenly to prevent scorching. Bring the mixture to a rolling boil over medium-high heat, stirring frequently. This initial boil helps activate the pectin (even if you're not adding extra, plums have some natural pectin!). Be careful, as it can bubble up quite a bit! After about 5-7 minutes of vigorous boiling, reduce the heat to a simmer. This is where the magic truly happens. You’ll want to continue simmering, stirring occasionally, for about 20-25 minutes, or until the jam thickens. How do you know it's ready? I always use the 'cold plate test.' Keep a small plate in your freezer. When you think the jam is ready, spoon a tiny blob onto the cold plate, wait 30 seconds, then push it with your finger. If it wrinkles, it's set! If not, keep simmering and test again every few minutes. Overcooking can make it too stiff, and undercooking means it won't set. It takes a bit of practice, but you'll get the hang of it! Remember those fresh basil leaves? Stir them in just before you take the jam off the heat. This preserves their vibrant flavor and color. If you add them too early, their delicate notes can disappear. If you want a smoother jam, an immersion blender is your best friend right after it comes off the heat, before adding the basil. Just a quick pulse or two, and you’ll have a lovely, smooth consistency. Now for preserving! Ladle the hot jam into sterilized jars, leaving about a quarter-inch headspace. Wipe the rims clean, secure the lids, and process them in a boiling water bath for 10-15 minutes (adjust for altitude). This step ensures a long shelf life and proper seal. Once cooled, you’ll hear that satisfying 'pop' as the lids seal. Store your beautiful Shiro plum basil jam in a cool, dark place. But wait, what else can you do with these amazing Shiro plums? While this jam recipe is a personal favorite, Shiro plums are so versatile! Their sweet, slightly tart profile makes them fantastic in so many other dishes. One of my go-to quick uses is a simple Roasted Shiro Plum Dessert. Halve and pit a few plums, toss them with a drizzle of honey or maple syrup, a pinch of cinnamon, and a tiny bit of fresh lemon juice (the OCR mentioned lemons, and they truly brighten plum flavors!). Roast them at 375°F (190°C) for 15-20 minutes until tender and slightly caramelized. Serve them warm with a scoop of vanilla bean ice cream or a dollop of Greek yogurt for a healthy yet indulgent treat. For a savory twist, I sometimes make a Shiro Plum Glaze for Pork or Chicken. Just simmer some pitted and chopped Shiro plums with a splash of balsamic vinegar, a spoonful of brown sugar, and a sprig of rosemary or thyme until it reduces to a thick sauce. It’s absolutely divine brushed over roasted meats during the last 10 minutes of cooking. The sweetness of the plums perfectly complements savory dishes. And don't forget Shiro Plum Salsas or Chutneys! Dice them finely with red onion, jalapeño, cilantro, and lime juice for a fresh topping for grilled fish or chicken tacos. They add such a lovely, unexpected burst of flavor. So, whether you're making a big batch of jam to enjoy all year or simply looking for ways to savor fresh Shiro plums, these little golden fruits offer a world of culinary possibilities.
