Air fry chicken with avocado and orzo

For the Salad:

1 cup uncooked orzo

1.5 chicken breast butterflied into thin

1 ripe avocado, diced

½ cup cherry tomatoes, halved

⅓ cup feta cheese, crumbled

¼ cup red onion, thinly sliced

2 tbsp chopped fresh cilantro or parsley

Salt and pepper to taste

For the Dressing:

¼ cup extra virgin olive oil

2 tbsp red wine vinegar

1 tbsp lemon juice

1 tsp Dijon mustard

1 tsp honey or maple syrup

1 garlic clove, finely minced

Salt and pepper to taste

Step 1

Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions (typically 8–10 minutes), until al dente. Drain and rinse under cold water to cool it quickly. Set aside.

Step 2

Season chicken to your liking and then at 400 degrees air fry chicken for about 8 min each side (thin sliced mine) and let rest before cutting.

Step 3

In a small bowl, whisk together olive oil, vinegar, lemon juice, Dijon, honey, garlic, salt, and pepper until emulsified. Taste and adjust seasoning if needed.

Step 4

In a large mixing bowl, combine the cooked orzo, grilled chicken, avocado, tomatoes, onion, feta, and herbs. Pour the dressing over the top and gently toss until everything is well coated.

You can serve it immediately or chill it in the fridge for 20–30 minutes to allow the flavors to meld.
