Lemon Poppy Seed Muffins
Ingredients:
• 1 ½ cups all-purpose flour
• ½ cup granulated sugar
• 2 teaspoons baking powder
• ¼ teaspoon salt
• 1 tablespoon poppy seeds
• 1 large egg
• ½ cup milk
• ¼ cup vegetable oil (or melted unsalted butter)
• 1 teaspoon vanilla extract
• Zest of 1 large lemon
• 2 tablespoons fresh lemon juice
Optional Glaze:
• ½ cup powdered sugar
• 1 tablespoon fresh lemon juice

Instructions:
1. Preheat oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners or lightly grease.
2. Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds until well combined.
3. Mix wet ingredients: In a medium bowl, whisk the egg, milk, oil (or butter), vanilla, lemon zest, and lemon juice until smooth.
4. Combine: Pour the wet ingredients into the dry ingredients. Whisk or stir gently until just combined—do not overmix (a few small lumps are fine).
5. Fill tins: Divide batter evenly among the 12 muffin cups (about ¾ full).
6. Bake: Bake for 12–15 minutes, or until muffins are golden brown on top and a toothpick inserted into the center comes out clean.
