Healthy Lemon Poppy Seed Muffins 🍋
Lemon poppy seed muffins are some of my absolute favorites! This recipe is perfect if you’re looking for a low calorie, low sugar version of a classic treat.
Ingredients ——
1 & 1/2 cups flour
1/4 cups Truvia Sweet Complete (This is different than regular Truvia, it’s their 1:1 sugar replacement.)
1 tsp baking powder
1 tsp baking soda
1 cup low fat Greek yogurt
1 egg
1 tbsp lemon zest
1/4 cup lemon juice
(about 1 lemon for the zest and juice)
1 & 1/2 tbsp poppy seeds
Mix all the ingredients together in a bowl. The baking soda/powder and lemon juice may start to fizz, that’s okay!
Divide into 12 muffin cups and bake at 350° for about 16 minutes.
Each muffin is 79 calories: 1.1 grams of fat, 14.1 grams of carbs (.9 grams of sugar), and 4.2 grams of protein
