🍋🌿 Lemon Herb Orzo Salad 🌸
Orzo • Cherry Tomatoes • Cucumber • Feta • Lemon Dressing
A fresh, zesty spring salad bursting with color and brightness. Light enough to feel like sunshine in a bowl! ☀️
Ingredients:
1 cup orzo pasta
½ cup cherry tomatoes, halved
½ cup cucumber, diced
¼ cup crumbled feta cheese
2 tbsp fresh parsley, chopped
2 tbsp fresh mint leaves
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
Salt & pepper to taste
Optional: edible flowers, microgreens
Directions:
Cook orzo according to package directions. Drain and let cool.
Whisk together olive oil, lemon juice, lemon zest, salt & pepper.
Toss orzo with the dressing while still slightly warm.
Fold in cherry tomatoes, cucumber, parsley and mint.
Top with crumbled feta.
Garnish with microgreens or edible flowers for that spring touch. 🌸
