I already explained cornstarch in another video, but Dijon mustard is an emulsifier, which means it has a hydrophobic side and a hydrophilic side. The hydrophobic side attracts oil, and the hydrophilic side attracts water. That’s what helps hold those two things together—things that normally wouldn’t stay together—which creates a smoother, more consistent sauce. That consistency helps the sauce stick to itself, and in turn, stick to the seafood better because it’s trying to stick to its self due to the physical interconnection that’s happening microscopically.
