ここでは「簡単に失敗しにくく」「甘さ控えめに調整できる」ポイントを追記します。自家製ジンジャーエールを作る時、味は良くても“発酵が進まない”“辛すぎる/甘すぎる”が起きがちなので、私が毎回気をつけているコツです。 ■甘さ控えめにするコツ（後から調整がいちばんラク） キビ砂糖はレシピ量で作っておいて、飲む時の「割り方」で甘さを調整するのが失敗しません。私はまず炭酸：シロップ＝6：1くらいから試して、甘ければ炭酸を足します。レモンを入れているので、意外と炭酸多めでも味がぼやけにくいです。 ■発酵が進みやすい下準備 ・容器の消毒はしっかり（熱湯orアルコール） ・生姜とレモンは“水気をよく拭く”のが重要。水分が多いと傷みやすくなります。 ・重ねた後、上から砂糖でしっかり覆うと空気に触れにくく、状態が安定しやすいです。 ■常温発酵の見極め（夏の飲み物 手作り向け） 夏は2〜4日で香りが立ってきて、シロップがサラッとしてきます。毎日1回混ぜる時に、スパイス（クローブ・黒胡椒・シナモン）の香りがふわっと出てきたら飲み頃のサイン。逆に「アルコールっぽい刺激臭」や「糸を引く感じ」が出たら、無理せず処分してください。 ■ヨーグルトメーカー/炊飯器を使う時の注意 58〜60℃をキープすると麹の甘みが出やすいです。高温になりすぎると香りが飛びやすいので、炊飯器の場合は温度計があると安心。私は途中で一度かき混ぜて、全体の温度ムラを減らしています。 ■辛さ（生姜感）をマイルドにしたい時 土生姜だとキリッと辛く、新生姜だと爽やかに。辛さが苦手なら新生姜寄りで作るか、スライスを少し厚めにすると抽出が穏やかになります。逆にパンチを出したい時は薄切り＆少し長めに置くのがおすすめ。 ■余ったレモン・生姜の楽しみ方 シロップを使い切った後のレモンは、紅茶や水に入れると香りが復活します。生姜は刻んでヨーグルトに混ぜたり、カレーや炒め物に少量入れると無駄が出ません。 ■保存と作り置きの目安 冷蔵で約3週間が目安。私は清潔なスプーンで取り分け、開け閉めの回数を減らすために小瓶に移し替えることもあります。暑い時期は特に、早めに飲み切ると安心です。
